How about the Scandinavian countries? Yes, they are a little more expensive than Spain or Portugal, but definitely a good place to spend a vacation.
Or don't fly. You could do a transatlantic crossing on the Queen Mary or Queen Ellizabeth. They still do them, starting from about EUR 2,000 (single ticket, inside cabin, double occupancy). Or just as short cruise for a few days, it doesn't have to be the "big one" right away.

That depends on which airport you are flying from, and what sort of holiday you want. Anywhere in Europe is within 4 hours of UK.
If you are flying from the UK, then just about anywhere in Europe is within four hours flying time. Just pick a place you'd like to visit then check the flight time.
EDIT: Have you looked at alternatives to flying eg Eurostar to Paris or Brussels, then fast train to another destination; or ferry from England to France then train to whichever country you want to visit. Not as fast as flying of course, but a viable option, and many people travel this way.
