That being said my mom's family is from Guatemala, so I've been there lots, and it's actually very pretty. Honduras and Belize are also fun. And yes i KNOW these places are in Central America, not South America. Sorry.
Very difficult to answer. You can find everything you might want. Mountains - beaches - big modern cities - lovely rural areas - It really is up to you. I have visited every country in South America - except the Guayanas and Paraguay. Remember also that in most of the continent it is close to the beginning of fall For a quiet relaxing time, I would probably return to Uruguay
I have been to Chile and Argentina. Both Wonderful trips. Patagonia is just fabulous. I would go back in a heartbeat. Just beautiful. (Southern Argentina and Chile). Iguazu falls are pretty cool. You can see those from Argentina or Brazil (keep in mind you'd have to have a Visa). I'd like to see the magellan's straight. Supposed to have some cool wildlife and fierce seas, etc.
I bet there are some neat Amazon tours, however that'd probably be really muggy. (high humidity). To give you a relative idea, I went during the winter.

You don't say what you want to do. If you want a landscapes Colombia is a great place with wonderful people. If you are into archeology then Peru or Guatemala/Honduras. If you are into diving Honduras followed maybe by Colombia. If you are into nightlife I would probably say Colombia or Argentina but anywhere might work. If you like mountain climbing, hiking and wine then definitely Argentina or Chile. If you are into indigenoous people then I would say Bolivia or Guatemala. Lot's off options depending upon what you would want to do.
