For a start Australia is a big country. The diving is excellent, the marine life is awesome. If your into roughing it, a camping holiday of the Kimberlies. You could also go to Cooper Pedy, and book into one of the underground hotels.
You don't mention Portugal, more the south of Portugal, great party atmosphere, the food is great.
You also don't mention Malta, places like Valetta.
South Africa, since the end of Apathied, places like Pretoria and Soweto have changed dramatically. The best thing to do is go on a 5 day safari and do some shooting with a camera, to see the wild in the natural state is something else.
Fiji, we booked the Beachcomber Island Resort, your in swimmers mainly, from there you can go to other islands or snorkel the reef. You can do the same thing with the Australian Whitsunday Islands.

You mention Jamaica, I would rather places like St Maartens, I wouldn't do near the Dominican Rebuplic.

In New Zealand most go for the backpacking option if they aren't working. Usually they travel from the bottom to the top Dunedin is the best place to start since there isn't all the much south of there other than Stewart Island. Also star watching in the starlight reserve is awesome.

There are these WONDERFUL institutions in your country called libraries. In them, you will find books about everything, sorted into sections. There will be a travel section, in which books are sorted according to country. So get yourself in there and start reading.
