Wherever I go, I'd like to do some hiking (I like winter hiking) and checking out natural and cultural sights.
Then a week of holiday stay in Bali Island in Indonesia could more than accommodate what you want for your Christmas. The beautiful beach, the just right cool and temperate season in the island is just right for not too freezing Christmas season. Check out this website for some offer - http://www.balivillaholidays.com/
It depends. There's not much direct sunlight, but you have over an hour of dusky glow on either end of the sun being up. The city's all lit up bright, especially around Christmas (power is cheap and clean here, so people sort of go crazy with it). And of course in winter you can get the northern lights, there's less tourists, things are cheaper, and you get the greater contrast between the hot waters and the cold air.
Just some thoughts. :)
