Well, there is the Amish. They live completely without technology, live off the earth like you described etc.
But you might not like the heavy religion that comes with that kind of community?

Well there are plenty of places to escape technology.
You can volunteer as a teacher in western China where there are only basic roads and often no electricity.
You can also go to many monasteries around the world. Buddhist monasteries are often the best though you see korean buddhist monks walking around in nikes with cell phones there are also many buddhist monasteries you can stay at.
Don't forget monastaries in Europe as well.
There are also plenty of meditation retreats around the world with little technology allowed....a nice place to find a job.
There's a big part of northern Canada where there is basically no infrastructure because very few people, few or no highways, no organized towns, etc.. It's a haven for those who don't want politicians and bureaucrats making up rules. A rough life, though. You'd need to be a quick learner if you weren't used to it.
I met a woman who lived in a tent in the Yukon (winter and summer). She didn't talk, either.
There is a place in North Carolina, it's called "Earth Haven". It's a nice community. No electricity, no money. Just trading, and farming technology! It's about 25 miles from black mountain. It might appear on Google, Not sure though .
