We also want to go somewhere that has a beach.
Wherever we go has to have things to do. For example, banana boating or swimming with dolphins or camel riding.
We've looked at Spain, Cyprus, Egypt - but don't really know where we want to go.

From the places you suggest, I would say Cyprus. But I would recommend the Greek islands, because they have the weather you are looking for at the time of year, and they have the beaches too. Plus, you can tour around a few of them, hopping on and off ferries, or flying between them on a multi-stop ticket. If you get bored of one island, you won't be staying there all that long. Or you can go to an interesting island, explore all that it has to offer, and then move on again. Santorini is the picture-postcard one, Crete is the largest and has the most going on, and Rhodes is probably the most interesting culturally.
Sharm el sheik sounds the place for you.
It is nice and hot, you can do camel treks and swimming with dolphins. If you are looking for a very luxury holiday and don't mind spending much, the four seasons hotel is for you. If you are looking at a less expensive trip, then the hotel Novotel would be perfect, it is 5 star, but with half the price and less of four seasons!

SOUTH OF FRANCE OR TUNISIA the weather is lush, like amazing and the beaches are really nice.. I cant remember the name of the places I went to but there were pools, pubs, clubs, beaches, entertainment and you could book water activities (I jumped off a pirate ship into the meditation sea, not many people can say that) ;) and that was all in one resort also they were all inclusive.
Go to my country, the Philippines. Its summer time here during April/May. There are lots of things you can do like banana boating, diving/snorkeling, sight seeing, you can also swim with the dolphins in Subic, Philippines. You can check these websites for more information. :)
