It didn't really take off in Spain though. It became popular within Belgium. A country who to this day claims to have invented it (lairs). In the early 1700's Thomas Jefferson traveled to French sampling this "new" cuisine becoming popular in Western Europe. He thought the French invented it so people called it French Fries. The name, as you know, stuck.
