Thinking maybe:
Greece OR Iceland OR Rome (Few days in rome then train to Florrence or Napels)
All your experience and advice would be greatly appreciated. Also I will be going in early October.

With 8 days Rome and Florence would be great. There's a lot to see and do and you'll have time for a couple of day trips. You could visit Tivoli, Orvieto, Ostia Antica, Pompeii or Capri pretty easily from Rome. From Florence, Arezzo, Pisa & Lucca, Siena, San Gimignano or the Chianti wine country would be good day trips. For Capri or Pompeii take the train to Naples. From Napoli Centrale Station follow the signs to the Circumvesuviana trains. The Pompei - Scavi Villa Misteri stop on the line to Sorrento is where you want to go for the ruins: http://www.vesuviana.it/web/en . For Capri, take a taxi or bus from Napoli Centrale to Molo Beverello (or to Calata Porta di Massa) to get the ferry to Capri: http://www.capri.net/en/ferry-schedule
October is a great time to visit. It's cooler than the peak tourist season in the summer and a bit less crowded, but the weather is still often nice enough to sit out in the piazzas for a meal.
Iceland is also a beautiful place to visit. Going there, you'd have less travel time if you're coming from the US.
