well, your question is not easy to answer since I could give you tons of tips for almost every country in Central and South America. It really depends what you are looking for, how long you wanna go, what your budget is, etc.
A great country to visit is Nicaragua. It is a beautiful country, the people are friendly, and it is very inexpensive. Spend some time in the beautiful town of San Juan del Sur, located about 30 miles north of Costa Rica on the Pacific Coast. Google it! Visit the incredible island of Ometepe in Lake Nicaragua. See one of the oldest colonial towns (Granada) in Latin America.
Another great country is Colombia. An incredible beautiful country, the friendliest people in all of Latin America, amazing vistas in the Andes, great cities. Visit one of the most beautiful colonial cities in the world (Cartagena), go on a 5 day jungle trek to "La Ciudad Perdida" (The Lost City), which will cost you about $ 350.00 all inclusive. This will be a trip of a lifetime. Visit the "Cafetera" area (coffee growing region in Colombia), go to Medellin, which is a very nice city and was voted the most innovative city in the world last year.
There are also great places to go in Brazil and other countries.

The countries I am most familiar with (I have traveled to all of them, some of them several times) are: Nicaragua, Costa Rica, Panama, Colombia, Ecuador, Peru, Bolivia, Brazil, Uruguay, and Argentina.
Colombia has everything! If you want to go to a beach party go to Cartagena Santa Marta or Barranquilla! If you want to go to a club in "summer" go to Villavicencio bucaramanga cucuta manizales or Medellin and if you like more cold wether there's bogota, but you have some incredible places to meet in each city too! I promise you'll have fun. If you don't like Colombia Dominican Republic is awesome to!!
Panama .USD is used .cheaper than CR .some areas you,dont want to be in like all,countries .but overall safe . Good direct flights from USA do a google on republic of panama .lots comes up on panama city FL .just watch that
