I'd live anywhere suffolk ( Bury St Edmunds or Ipswich= 45 minute train ride to central london) torquay, cornwall, poole, dorset there a few nice places here in the uk. You might be better setting up your own business and advertising your services on gumtree or the local newspaper.
Ask yourself this why do you want to leave Australia to come to the UK?? is it for a new challenge or is it for a better way of life? if new challenge then great but if for a better way of life i'd stay in Australia unless your happy to put up with 100mph way of life and crap weather and bad pollution.
Anyway whatever you decide good luck in your adventure because I'm hoping to start mine next year and leave the uk for Australia :)
There is not a great deal of jobs for Live in nannies in the Uk as only the rich can afford them.
There will be more jobs in London than anywhere else.

Be careful of exploitation and make sure you have a legally enforceable contract prior to signing up. Avoid non-European families (famous for exploiting cheap labour at home). Otherwise, you could end up 24 hours with the family and see nothing of the beauty of the countryside, or the generosity of the average not-so-wealthy Brit. (And don't get seduced by any male provider!)
There are loads of nice places to live but only a few with solid opportunities, shopping, night life and commuting such as: Nottingham, Leeds, Sheffield, Manchester, Edinburgh, Newcastle, Glasgow, Dundee, Birmingham, Bristol, Southampton, Milton Keynes and of course London.
I moved from Leeds to Nottingham and they are both identical in terms of shopping, night life, music, tourism, opportunities and economy.
Has to be London. That''s the only place where people are wealthy enough to employ nannies.
If not into cities, try some nice coastal places or places like Harrogate, in North Yorkshire???..RICH and need nannies...
So on a Youth Mobility visa... you will need to look at what is advertised and will then live where the job is, so that will greatly depend on who and where they want 'live in nannies'
Probably south (brighton, hastings, plymouth, cardiff)
The north is cold, wet, and generally more run down
