You could take advantage of the fact that we are European citizens and free to go when and where we like. Instead of relying someone else's arrangements (travel agent or tour company), just get in the car and go. Drive down to Dover, take the ferry across, drive off into the wild blue yonder. Trips like this are very memorable, because everything is a surprise, fresh, not boring. Avoid having much of a plan, because the surprise restaurant, the surprise hotel, the surprise cake shop, the surprise conversation with a native are what amke such a holiday joyful.
Travel agents sell whatever gives them high commission.
There are many decent low cost hotels on the continent - if you do not need a beach then all cities have art galleries, museums - or smaller towns for nature and walking.

I always use a local travel agent,you get better service than the "chains" for about the same money,online is Ok,but once again you do not get the service.
Pop in and talk to them,they will find out what you like,what your budget is and your wants.

Bulgaria or Romania are very cheap. There is the Black Sea coast or moiuntains. Romania includes Transylvania. You can visit Dracula's castle!
