We aren't planning on doing any expensive activities, just chilling by the pool and probably go out 3 or 4 nights, so money will be for that, food and probably a few gifts. so will 480 euros be enough for me to take for the week?

If you have covered the accommodation, ie b&b it's just enough with care, but you really need closer to 700

Think 480 Euros will be fine for a week provided you keep a close eye on what you are spending it on.
