I've had a look at places like Turkey, Malta, Greece... they all look around 18-20 degrees end of May.
If anyone travels a lot or has a lot of experience on going on holiday I would appreciate your input :)

What about Tunisia? It's less than 3 hours flight from London and should be hot at the end of May. Plus it's cheap and has great beaches
If you want to be safe don't choose muslim countries like Turkey, Egypt, Tunisia, Libya... Malta is a very small island (really small) there are no beaches over there, either nightlife..
I propose you to go in Greece. Here is a picture from my island Crete.
Have you considered Spain, Gibraltar? Spain in general becomes very warm in May and it has great food!
Morocco is interesting, and hot at that time of year, and easy to get to.
